would this freeze? (cashew cheese)

i am trying to feed the freezer in anticipation of my lo's arrival in early may. one of our favourite meals is this vegan mac & cheese:

but i am not sure it would freeze well. has anyone here frozen cashew cheeses before? and do you think the potatoes would defrost weird, even if they're blended with a bunch of different ingredients? i know some say potatoes shouldn't be frozen because of texture issues, but i did freeze a shepherd's pie last time with no problems, perhaps because the potatoes were mashed?

i am also wondering at which stage to freeze it -- before baking?

any advice or input is much appreciated!

I have frozen shepherd's pie before and it dethawed in a very "runny" way. I've never frozen cashew cheeze but I am wondering if you can just freeze the cheeze seperately so you can whip it in the blender if it thaws out weird or runny, and then add it into the macaroni after you have the exture right. That's not quite as easy as just nuking a ready made dish but the cheeze would be done already, and you could probably cook and freeze the plain noodles so all you'd have to do is thaw, toss in a dish and bake.

yeah potatoes don't freeze well at all. i dont know about the cashew cheese though

I've made soups with potatoes that turned out okay after being frozen, but I'm not sure it would be the same in the dish you posted. However, the favorite homemade vegan cheese in our house is a cashew cheese that tastes great frozen, frozen then heated, or just refrigerated. Let me know if you'd like the recipe.
