i am trying to feed the freezer in anticipation of my lo's arrival in early may. one of our favourite meals is this vegan mac & cheese:

but i am not sure it would freeze well. has anyone here frozen cashew cheeses before? and do you think the potatoes would defrost weird, even if they're blended with a bunch of different ingredients? i know some say potatoes shouldn't be frozen because of texture issues, but i did freeze a shepherd's pie last time with no problems, perhaps because the potatoes were mashed?
i am also wondering at which stage to freeze it -- before baking?
any advice or input is much appreciated!
