I have about 2 cups (maybe 3? haven't measured) of cooked rice in the fridge. I'm looking for something easy to do with it, besides just heat it up as is. Ideas?

Fried rice?

Scramble an egg, saute some veggies, add the rice and some butter and soy sauce. If you have some left over cooked chicken or pork you could trow that in too.

If you have a few other things (veg, beans, an egg, cheese, whatever), you could make them into patties and fry or bake them. The other day I had some leftovers and made a rice salad with rice, turkey breast (heavy on garlic and rosemary), some shelled pistachios with a little lemon juice, olive oil, salt and pepper.

mmmm .... my family's favorite is crockpot stuffed peppers. Cooked rice, some spices & raw hamburger, super easy!

Just google it. It is on the blog something like "crockpot 365" since the woman is doing crockpot for a whole year.

A second vote for fried rice - it's best with not-freshly-cooked rice anyway! I normally cut up whatever veg I have on hand, sautee a bit, add any softer veg, add a couple of eggs, add the rice and some soya sauce/sesame oil if you have it for flavour. Make sure the pan is nice and hot, that gives it the nice crispy bits on the bottom.

Another idea is rice pudding. I'd just toss the rice into a pan with a bunch of milk, simmer for a little bit, stirring so it doesn't burn on the bottom. Once it thickens stir in some sugar and a little cinnamon, raisins if you like too. Yum!

Fried rice is good, but my favorite is to mix the rice with a little salt and pepper and a couple of eggs, maybe a little grated cheese, to hold it all together. Press it into a pie plate and par-bake it for about ten minutes, and you have a lovely delicious flourless crust for a quiche or other dinner pie. Leek pie is especially good this way!

I use leftover rice in
-veggie fried rice
-lemon rice
-added to bean soups
-rice and bean meals
-in taco salads
-rice salads

These days, my favourite thing to do with leftover rice is cook coconut milk with curry paste, then pour it all over the rice when I'm done.

I made rice pudding/porridge the other day - rice, almond milk, cinnamon, sweetener, vanilla...whatever else tasty you want. Heat it through on the stove til the rice is really really soft! Kinda like oatmeal.

Oh my!! Thank you!! I was sure I would find success posting this here! So fried rice is sounding super good, I just had no idea how to make it.

Lemon rice: how to make? That sounds really good too.

Coconut milk with curry paste, that speaks my language! What are the proportions you use?

Had some leftover rice in the fridge here too today so I made a fried rice w/
cooked chicken, peppers, onions, corn, mushrooms.
Poured over a thrown together mix of soya sauce, rice vinegar, honey, lemon juice for a minute.

I love throwing the rice in a pan and adding eggs to scramble and a little creole seasoning.

I make a similar dish with shrimp or chicken, and add some frozen mangoes and peas in addition to the coconut milk and curry paste/powder. Yummy!

Fried rice and lemon rice both start off the same

Sautee onion, garlic,ginger
Fried rice-add whatever veg you want diced and scramble some eggs into the mix, add the rice and soy sauce frozen corn and broth if needed
Lemon rice-add coriander, tumeric, pepper, the rice, lemon juice and frozen peas

Yikes! That sounds sooo yummy! I think I will have to make a big batch of rice this week, just to try the lemon rice and the coconut curry rice. How have I lived this long without having such essential rice dishes??

Oh good grief! Leftover cold rice should be turned into fried rice. You can't make good fried rice with fresh rice. Has to be day old and cold at least.

Ohhh....yummy. I'm going to make that soon. Does it have to be leftover rice, or will fresh work?

hmm....I have some leftover. I could make this for lunch tomorrow, maybe.


Ola_ I probably wouldn't use peas, as ds1 can't stand them. But, the mango sounds so good. I'll have to try that, too.
