Chayote?

I was just reading one of my gardening books (Carrots Love Tomatoes) and was perusing the companion suggestions for various crops and came accross suggestions for chayote. I've purchased this a few times but never eally knew what to do with it but the plant itself sounds pretty fabulous.

Anyone ever grown it?

My family grew it when I was a child in Southern California, my parents are not great gardeners so I assume the climate was right for it or that it is easy to grow. I remember it grew on a vine. My mom cooked it like squash. I have not grown any as an adult.

My in laws in Mexico have some growing, not sure how though. She cooks them kind of like potatoes.
