simple kinder curriculum with minimal prep?

So I *think* I've decided to pull Boo out of K12. I am trying to find the MOST simple curriculum to use with him. We are already doing mostly unschooling type stuff but I'd like to add some structure in.
I get overwhelmed (as does he) with busy workbooks or multi step assignments. I'd love to find a basic curriculum that won't overwhelm either of us and that will be sensitive to his learning challenges
Any ideas?

Literature-based maybe? Like Ambleside Online????? Its cheap, short lessons, and may work. Can't remember all his challenges though..............

FIAR? Read a book, discuss an idea or two each day, do some sort of follow-up project or reading if it strikes your fancy... Doesn't cover the 3R's, that's separate.

ETA: I'm hoping to do this in a low-key way, incorporating Ambleside/CM principles, as "pre-homeschool" before truly starting Ambleside, which doesn't really start until 6+yo. Here are links to a CM Year 0 (5yo's).
