limiting diet further with allergies?

If your diet (or that of your kids) is already somewhat limited due to allergies, would you further limit it to be veg*n?
What about GF for gut healing (are there any other potential benefits of being GF)?

If it matters, I believe ds2 has a salicylate sensitivity. If it's not sals, it's almost certainly a food sensitivity (vs. environmental). Most fruits, and many vegetables, are high in sals. Grains, legumes, and animal products are low in sals.

Vegan, no. Vegetarian, maybe. GF, yes.

That would be my answer regardless of the particular sensitivity, but if animal products are some of her only safe foods, then I definitely would not remove them.

I agree. I feel that one can't get the needed nutrition without at the very least dairy and eggs, however, I also realize that others feel strongly in other ways, and try not to alienate them.

In your case though, it seems the only option if she has a salicylate sensitivity. If the foods she can eat are mostly grains, legumes, and animal products, then she REALLY needs the animal products. If her options for fruits and veggies are very limited, it seems unlikely she'll be able to do well as a vegan, or as a vegetarian who doesn't eat LOTS of dairy and eggs (and maybe fish.)

Particularly if you are having gut issues and considering going gluten free for gut issues (and it really does help a lot of people.)

Before you decide, thing about what her diet will look like under each of those options. What types of food will/can she eat if you are vegans? What types of food will/can she eat if you are vegetarian? What types of food will/can she eat if she eats meat? What types of food will/can she eat if you are any of those things plus gluten free?

And fwiw, you can get the nutrients needed from high quality meat, with limited fruits and veggies, if she can't eat them. It's harder to get absorb the nutrients without animal products (they actually aid absorption of some vitamins with their fat, and even a little animal protein means you get a lot more protein out of a grain/legume combo) certian, and if she primarily subsists on grains and legumes and not animal products, her diet will be badly unbalanced.

If you have ethical issues with meat, dairy and eggs, maybe you can keep some backyard chickens for eggs and find a local farmer who you can visit to assure you that at the least, the animals live good lives?
