What can I do with these beef trimmings?

I'm making some stew for dinner using a chuck roast. I've trimmed and cut my meat up, and now I have a pile of fat with little bits of meat attached. Seems wasteful to just toss it, and I'm trying to get better about using things as completely as I can.

What can I do with it? I have carrot, onion, and celery scraps. Could I cook all of the above in some water to make a broth of sorts?

Sure you can, boil it up, chill it so you can skim the fat off the top easily, then make soup.

We feed them to the dog.

You could render it, even just to get the fat out and use it right away, take out the crunchy stuff that remains, and then it use it directly to saute veggies for something.

I guess rendering has a wet method as well as a dry method--simmering it in water would be closer to the wet method, and what I described is closer to the dry.
