How do you get crispy oven baked sweet potato fries? I've only attempted once, and they were very soggy. What are your tips to making them crunchy and yummy? Please share...ds and I would really like to indulge in some tonight!

I freeze mine beforehand, but that is more for convenience than anything else.
I cut them, shake them in a bag with olive oil, sea salt and pepper. Bake at 375F for 20 minutes, then flip and cook for another 20 minutes. My kids scarf them down.

DUH! Why didn't I ever think of this!? I make these all the time, but how much easier would it be to cut a bunch @ one time then only use what I need since I frequently wind up needing less than another whole potato?
I made them this week, and had always had a sogginess problem. I read the Americas Test Kitchen recipe, and they were perfect. Toss 2 large potatoes with 4 TBS olive oil, salt and pepper. Cook at 450 for at least 22-25 minutes.
