Compromise Question

I can't do gluten and therefore don't eat a lot of bread generally. But since I've been pregnant, I've found it really convenient to have GF bread around for toast first thing in the morning before I get it together enough to decide what to eat for real. I have never been a baker and don't do many grains generally, so my options are what I can find in the store. I have been buying Udi's, which I really like.

My question is does it make more sense nutritionally to buy the white or the whole grain? I like the flavor and texture of the whole grain better. But I remember reading that if you are not eating soaked grain bread, the white flour is more easily digestible.

Does that make sense?
What would you buy?

Personally, I would buy the whole grain variety. Even if is not all absorbed, there are more nutrients present, and there is fiber, too.

Whole grain. The phytates don't keep you from absorbing all of the nutrition, just a portion of it.

it depends.. personally i'd go for the white flour version...i wouldnt be too worried about missing out on minerals/vitamins because grains don't have ,many to begin with - you're probably getting plenty from meat/veggies anyway. The white version is probably easier to digest and hasn't got as much fiber (which for me is a plus because fiber isn't actually essential, and can be detrimental in large amounts), but that's just me.

I"d go with the whole grain because the fiber would help mitigate the blood sugar effects.

it used to be I would have said white, to avoid the phytates, but I'm starting to think that whole grain is better. With white, your body requires nutrients to process the food, and so you end up with less nutrients than you started with. with whole grain, it might not be that digestable and you might not get a lot of nutrients, but I think at least you aren't losing nutrients.

ita. i dont eat grains generally but deter from this once or twice a week for white rice.

Thank everyone for the really interesting input. The responses basically mirrored my own internal dialogue. I went to the GF store today and ended up restocking with the whole grain. I just like it better, that's really what it came down to. I do eat white rice when I eat rice...happy to be inconsistent I guess!
