Easy, Lent Friendly (i.e., vegan) Recipes

My father is Russian Orthodox, and is currently observing the holiday (can you call it that) of Lent by abstaining from certain foods. It is essentially a no animal products diet, so I figured you lovely vegan ladies might have some good recipe ideas for me to pass along to him. He is single and lives alone, so I'm looking for filling recipes that would moderately easy to make, and might even feed him for a meal or two (or three). He always loses quite a bit of weight during Lent, and he's already a very skinny guy. I know that animal fats can contribute to the weight department, but I also know that he's losing weight largely because he's not eating a vegan diet in the way he should.

So hit me up with some easy and nutritious vegan recipes, please!

i'm eating vegan for lent as well. we're abstaining from sugar, caffeine, all animal products & leavened bread. vegan cooking was the closest i could find for recipes. i'm absolutely LOVING it! my husband and i feel absolutely fabulous. i joined a vegan yahoo loop for recipes & my favorite website is here: http://vegweb.com/index.php?PHPSESSI...cipecategories
