Okay! I just did my first batch of water kefir. I did a 3 day brew -as what I'm most attracted to are the bubbles. I'm "a skeered!" Did I screw it up? I used the following method:
•2 to 3 Tbs Water Kefir-Grains.
•handful of organic raisins
•half a lemon (not organic and with wax on it-naughty I know)
• 1/2 cup brown sugar
•6 cups fresh water preferably spring or good well water.
•handful of mint
All combined in a glass jar and left for 3 days to steep. I didn't have that many bubbles at the top. A finger dip taste test shows its lost the pleasant mild lemonade flavor of previous days and now tastes like something akin to beer. Must be high in the alcohol content now.
But I don't notice much bubbly.
Also, there was all this white sludge at the bottom. Have I damaged my grains?!?
