Which cuts of bone?

I was just wondering if I was in contact with a butcher or supplier.. should I be asking for certain bones over others?

I know knuckle bones are supposed to be high in gelatin which is good supposedly...

back when I was hunting I used the backbone of the deer and that turned out great but I have never seen a backbone for another animal. Would the bones in the thigh for instance be too big to get gelatin and minerals out of? should I be looking for smaller bones like knuckle bones... maybe even chicken only?
