What's your favorite thing to use mushrooms in?

I have a bunch of mushrooms (regular button mushrooms) that I need to cook up today. What do you like to use them for? I'm leaning towards stir-fry right now, but suggestions are more than welcome! Include a recipe if you're so inclined Thanks!

quiche (mushroom, spinach, swiss) or beef stroganoff. I like to make cream of mushroom soup, too. I just google allrecipes, usually.

Or, because I like mushrooms so much I like to pan-fry them with butter and eat a big pile of them as a side dish.

Crepes! I do a mushroom filling with mushrooms sauteed in butter and shallots and a little white wine with shredded cheese melted in (I use gruyere). Always a hit around here.

eggs, fritatta (especially), stir fry, pretty much anything

but my favorite is:
*note, I usually use crimini mushrooms, but I'll use anything, and I chop them up really small*

Mushroom Barley Soup
From: http://blessingsforlife.com/recipes/...shroomsoup.htm

Cook 1/3 cup pearl barley, according to package directions
*you may want more barley than this*
*you can also put the barley in, uncooked, and simmer the whole soup til it's done*

1/2 ounce dried shiitake mushrooms (optional)
- soften for 1 hour in hot water
- drain and reserve liquid (strain to remove grit)
- remove stems, chop or slice

Heat 1 Tbsp olive oil in large soup pot
Cook until tender:
1 large onion, chopped
2 carrots, chopped
2 celery, chopped (optional)
12 ounces fresh shiitake mushrooms, stems removed, chopped or sliced
3 cloves garlic, minced
1 1/2 tsp fresh thyme, chopped
1/4 tsp salt
1/4 tsp fresh ground black pepper

Stir in:
14 1/2 ounces of broth
2 cups cold water
softened mushrooms
mushroom liquid

Bring to a boil. Simmer for 10 minutes. Stir in cooked barley. Simmer for 10 minutes.

4 servings: cal 76, carbs 33g, fat 4g, protein 5g, fiber 6g

I heart mushrooms! Stir fry, quiche, risotto, in a cream pasta sauce, sauteed with a couple of other veggies with a pesto sauce and penne/rotini, in an omlette, mushroom soup (with or without cream), mushroom brushetta (saute chopped mushrooms and onions, put on toasted bread with or without some cheese on top).

I like to put mushrooms in an omelet witih spinach and tomatoes. Yummy!

Oh gosh, omelets, stir fry, pizza, fresh in salad, on burgers or steaks, I couldn't pick a favorite, all yum.

My favorite is chicken tettrazini. Chicken, mushrooms and onions, pasta, and a white sauce made with half chicken broth/half milk or cream, a healthy splash of white wine, and a good amount of parm cheese. Yum!
