I just freeze it all down into shaped ice cubes and the kids eat them as wanna-be ice cream treats.

OMG, that is funny. I wonder if mine would go for it.

Is pulp from juicing healhty for you, extra fiber or do you think it may not be worth eating?

I don't know, I rarely juice but I don't see why it would be less healthy than eating fruit. It's just denser so it's not a coomon treat.

Not all fruits work, I imagine - citrus probably wouldn't. Pear, strawberry, and kiwi work fine though. Not sure about others. Just de-seed if possible for pears etc.

My mum always added the apple pulp to apple pies, you need to add some fresh apples too.

The grape pulp we put on the compost as it was mostly skin.

The only pulp I save is from the apples because it has alot of moisture in it still. I used to try to use the other pulp any way I can , but a while back a good mama here on this site share about how the juice is great for gut healing and that the extra fiber from the pulp is tough on the gut. So the pulp is now great for the compost and that way I know it is going to be used eventually i my garden.
