Need Yummy Vegan Birthday Cake!!!!

I'm doing the 21 Day Vegan Kick-start http://21daykickstart.org and My Son's 3rd Birthday is on the 21st of this month and I need to make a cake for him! I'd love to make a really yummy vegan chocolate cake, but I'm a little leery of just looking in some random vegan cookbook, because a) my MIL who will be there for the celebration always seems to make comments on my foods..most of which drive me batty and b) because my DH is convinced that vegans lose their real sense of taste and therefore don't know what really taste good any more (paraphrasing what he said last night when I mentioned I was going to ask all of you for a cake recipe..)

Essentially I want a super moist and yummy vegan chocolate cake that a person on a SAD (standard American Diet) would find delicious.. and preferably even find it hard to believe that it was even vegan! Would prefer recipes that have been tested on people on SAD diets because I can't do any testing before hand since I have to limit the sweets except on special occasions in the house due to DH being on a diet..

We love (LOVE!) this one: Vegan Magic Cake and the frosting, too!

Super moist and yummy. You might need to double for a birthday party because it gets gobbled up pretty quickly!

i just rented a video from netflix by compassionate cooks. they had a vegan chocolate cake (& homemade frosting!). i've not had it, but wow! it looked so yummy! i'm going to make it!

this is the same cake!! i didn't realize it had been listed already. you're video is much better than the youtube one i shared, lol. i didn't know about that website, so i'n excited to check it out. THANKS!

I also have had great results with that recipe. You can use cold coffee instead of the water for a richer flavor.

If you're willing to venture away from the chocolate idea or to make another cake to wow the skeptics, try the Coconut-Lemon Bundt Cake recipe from Veganomicon. I have knocked folks socks off with this one for some time now. It is truly sublime!

I always use the basic vanilla or basic chocolate cupcake recipes from Vegan Cupcakes Take Over the World and just either double it and pour into cake pans or just make two skinny - ish layers if I'm in a rush.

Just make sure you grease, line and flour the pans first. Go ahead and release them upside down on the cooling rack, since the chocolate one is a little delicate and can break apart with too much fiddling.

I have made these cupcakes into cakes for DH and DS who eat a mixed although not SAD diet. I have also made it for my brother, SIL, niece, nephew and for a friend and her family - all of the latter on SAD. They *devour* the cake and have no idea it's vegan! I do use plenty of frosting (8 oz. powdered sugar, 1/3 cup + cocoa powder, 1 tsp vanilla, and enough soymilk for the consistency I want). I decorate with all natural candies from WF or the HFS. Oh, yeah - I also always use high quality organic ingredients which does make a difference.

I'd say this recipe is pretty well tested on those folks who haven't lost their *real* sense of taste!

instead of layers though I either dump it all into one or two pans or make cup cakes. depending on my mood.

for frosting I just do cream cheese frosting with Tofutti fake cream cheese.
