Sweet potato rolls!

I'm looking for a recipe for sweet potato rolls, hopefully involving buttermilk. I have a recipe for biscuits, but I'd like a new airier version.

I'm having an issue coming up with a nutritionally dense version on the net. (they all seem to call for GOBS of white flour.)
I have 3 diff. types of WW flour as well as vital wheat gluten on hand. I'm not against *any* UB white flour, but not the majority.

I've adapted it to be a soaked flour recipe, and am adding a bit of applesauce for additional sweetness in place of a small portion of the sweet potato. I'll let ya know how they turn out!

My sponge is mixed now...just gotta run some errands, and will make them up later on this afternoon
