Give me your yummy and healthy pancake recipe!!!

My ds is now asking for pancakes every morning. I know there are some good recipes out there, so I thought asking all of you was the best place to go! I am open to anything and especially looking for pancakes with fruits/veggies, nuts, oats, etc in them!

I use this recipe. It uses mostly WW flour, and I think it's very tasty. It calls for buttermilk, but I usually make it with regular milk and they still turn out fine. It doesn't have a lot of extras, like fruits and nuts, but it's easy enough to add that stuff in!

Because of allergies I replace eggs with applesauce in pancakes. They taste great though they do not get fluffy.

I've had oatcakes before. It was really simple, mostly oats and water plus some kind of oil. It never occurred to me to have them for breakfast,

i love this recipe because of the healthiness of soaking the grains, because i can use all different kinds of grains (i've used rice, millet, whole wheat, oats and maybe others) AND because i prep it the night before, which makes it quick in the morning: http://www.passionatehomemaking.com/...spancakes.html

1 C white whole wheat flour
1 tsp baking soda
1 tsp baking powder
1/4-1/2 tsp cinnamon
dash of nutmeg
2 Tbs plain yogurt
1 egg, beaten
milk
fruit of choice: berries, sliced banana

Mix the flour to nutmeg in a bowl. Add in the yogurt and mix a bit. Add in milk until the mix is runny enough to pour easily off a spoon. Butter the pan, and when hot, add the pancake mix. When it's slightly cooked (so not runny anymore) I add the fruit to the top. I flip the pancake when it's very bubbly.
Cook until done on second side. Top w/yogurt of any kind, syrup or jam.

Although I add a dash of salt, a little vanilla extract, cinnamon and some nutmeg, but either way, they're easy.

Soak 1 C.oatmeal in 1 1/8 C. buttermilk for at least 10 min.
Add 2 Tbsp. melted butter and 2 eggs. Mix well.
Add 1 Tbsp. brown sugar, mix.
Add 1/2 c.flour, 3/4 tsp.baking soda and 3/4 tsp. baking powder.
I often throw in a bit of bran,ground flax, etc.

Fry in pan This are divine! We can't get enough of them around here!

LOVE this recipe!!!! I make a batch almost every week and freeze them, then we can warmup a few for breakfast each morning. I love using a buckwheat/oat groat combo. We have also used many different grain combos, and they all taste great.

This is an MDC recipe. I make it at least once a week. It's primarily oats, soaked, and has lots of eggs:

Oatmeal Hotcakes

2 cups rolled oats
2 cups buttermilk

4 eggs

1/2 cup flour( 2.5 oz)
1 tsp. baking powder
1/2 tsp. baking soda
2 Tbs. sugar
1/2 tsp. salt
4 Tbs. melted butter

Night before: stir rolled oats and buttermilk together in a bowl. Cover and
let stand on counter overnight.

The next morning: add eggs, sugar, and melted butter. Stir well to combine.
In small bowl, stir together the flour, baking powder, soda and salt; add
to the oatmeal mixture and stir until just combined. Cook on a lightly
greased hot griddle.

I didn't know you could soak something in buttermilk on the counter overnight. I will have to try that now, since the soaked grains are so much healthier.
