what's cooking veg*ns march 2010 thread

so we're almost halfway through the month, but i didn't notice a march thread, so i thought i'd start one...

i'm feeling uninspired in the kitchen these past few days. maybe because the weather is nice?

anyways, tonight it was simple sesame noodles with fried tofu and broccoli.

We had baked potatoes, tvp gravy and peas. It was a fast dinner night! Last night we had split pea soup (crock pot), salad, rolls.

mmmmmmmi haven't had sesame noodles in a while...may have to put that on the rotation for next week.

i've been feeling uninspired too, maybe because of winter produce. we are still living off stuff i froze over the winter and even local cabbage is gone now! all that's left is root veg.

but! we got our first local baby greens in this week so i made this:

baked mozarella and radicchio pasta

HUGE hit.

Totally uninspired here too! I'm longing for the growing season to start.

Last night was vegan pizza. Not very exciting.

Tonight is ratatouille with brown rice and salad.

Uninspired and still adjusting to life with a new baby + 3.5 yr old! We have some pre-made frozen meals, but can't have those every night, right?

Last night my mom made us Quorn roast, mashed potatoes and gravy, green beans and cranberry-apple bake. OMG so good, and I didn't have to make it or even think about it!

Congrats Chessa!

Tonight is a vegan mushroom picatta pot pie that I got at the farmer's market. We're also making fresh vegetable juice and a salad with homemade herb dressing.

tonight was seitan "steaks," baked potatoes, carrots baked in wine, thyme, and honey and brownies for desert.

Any chance on a recipe for that?

Tonight was YOYO night--you're on you're own. Well, sort of. Our 4 year old needed a bit of help. The 19 month old wouldn't eat anything we offered her. I just had an almond butter and blueberry jelly sandwich.

Sunday crepes: Sorry, no recipe as I bought it already prepared and frozen at the farmer's market. We didn't get to eat it though bc I didn't think about needing to thaw them before we could cook them. Oopsie! So they are thawing and we will eat them tomorrow.

What recipe do you use for the falafel? I would love to try baking them instead of frying. I rarely make them since I don't like to fry food.

I use this recipe here.
I like the recipe because even though it may not be authentic, its super cheap and easy.

DH and I made snobby joes last night from veganomicon. ohman. Yum! I used green lentils and a red bell pepper, extra spices, and a really really spicy horseradish mustard. We had it in whole grain pita pockets with a bit of fresh red chard stuffed in too. That's a hearty recipe!

I've been eating miso soup for breakfast, I love it! I simmer a few Tb of crushed wakame seaweed for a few minutes, turn off the heat and stir in a spoonful of mellow red miso and a sliced green onion and a capful of soy sauce. Delish! Also good with a bit of tahini stirred in.

Still at my parents' due to a nasty case of mastitis - so tho I haven't been cooking, I thought I'd post what my mom has been making, because it's still inspirational!

Monday we had grilled tofu with pesto mayo, tater tots and maple glazed carrots.

Tuesday was Burgerville ()

Today was ravioli with salad and bread.

It's so nice to have mom to take care of you when you're sick! And help care for your two kids.

Chessa: Hope the mastitis heals quickly! I had it twice in the beginning - it's awful!!

Tonight DH is off pretending to be Irish so I am having the new Amy's mac & cheese that is made w/Daiya cheese. Looking forward to trying it!

Tonight I made traditional hummus and the pita bread from here. MMMMMboy. The pita bread takes a while as it has 1 rising period but it's 3 hours. It probably doesn't need to rise that long. Some people say the dough was very sticky while kneading in the reviews, but as long as you follow the directions about using a floured kneading surface and adding small amounts sparingly, you won't have a problem. I never knew it was so easy or tasty!

I'm kind of having some food choice issues mamas and I'm hoping someone can offer some suggestions. I had my gallbladder taken out last Friday and food in general is not appealing. My average food intake right now is an apple in the morning, and then veg broth when I'm hungry, maybe with some crackers, and mashed potatoes for dinner. The thought of ANY protein right now seriously makes me want to hurl. Not sure what I should be eating but I suspect that my caloric intake right now is way too low and I am concerned that I am inhibiting my own healing process by not eating enough. Problem is nothing sounds good. Anyone been through this?
