Help me dream up a pudding.

So I've been wanting rice or bread pudding desperately and trying to figure out how to do this. I'm not able to eat grain at this point, and I'm trying to reduce my dairy consumption as well (though I am eating some raw, cultured butter and a bit of raw cheese) but there has GOT to be a way, right?

I was thinking about using either sweet potatoes or regular potatoes as the grain substitute and then making a coconut milk custard-- what do you all think?

Has anyone successfully made a delicious mostly dairy free, grain free pudding like this before?

I make vanilla and chocolate pudding with coconut milk and arrowroot. I'm not at home and don't remember exactly how much arrowroot per cup. I don't like "substitutes" for things like bread pudding because it wouldn't be bread pudding. I'd rather just have something completely different that doesn't need a grain.

I HAVE done something like making an almond meal crust (think graham crackers with almonds) and then sliced bananas, then pour the pudding on top and chill. It works best in small ramekins.

chocolate pudding from avocados and it was fantastic! can't help you with the bread unless you used an almond bread?

what about tapioca pudding using coconut milk rather than dairy?

I was also going to suggest tapioca... I've had coconut tapioca before and it's

But you could also just make an egg custard with coconut milk. Any recipe for flan or creme brulee you can sub coconut milk for the dairy.

We make one with banana and avocado and a little cocoa powder and maple syrup sooo good!

tapioca pudding! the pearls give it some texture... not exactly like bread or rice, but texture. I love it!

derrr I didn't see someone had already mentioned it. I think you could use almond milk if coconut milk isn't something you can eat.

I tried something and it was AMAZING! So, I boiled some diced sweet potatoes, drained them, and put them in a baking pan.

Then, I stirred together three eggs, a can of coconut milk, 3/4 cup of sugar (yeah, I know, but um....it was raw and fair trade? ), 1 tablespoon vanilla, 1/2 tsp cinnamon, 1/4 tsp nutmeg. I poured it over the sweet potatoes and baked for a while (I think it may have even been an hour) at around 375. It was WONDERFUL! Totally solved that craving.
