sweet potatoes

what's your favorite way to use sweet potatoes? i never used to care for them much, but now i'm craving them all the time, maybe because i make them for dd so often...

I like mine best cut into pieces and oven-roasted with a bit of olive oil.

This reminds me, i forgot sweet potatoes at the store today darn it. I've been craving them too. I like them cooked like a baked potato, topped with cinnamon, brown sugar, and butter.

I've been eating them a lot lately. I just wash them and poke a few holes, then microwave them and pack them with me to work for snacks. I like them better oven roasted, though, with some quartered onions, olive oil and salt and pepper.

I love them topped with chili and scallions.

Oven fries are also good with sweet potatoes, and we often steam them with a bunch of other veggies.

I usually mash like normal mashed potatoes and adding some butter and cream. One time I tried to add carrots and mash them in, but I didn't time it well and the carrots weren't cooked enough. It ended up being mashed sweet potato with chunk of carrot. A very orange side dish.

I slightly prefer the white sweet potatoes. I cut them in fry shaped pieces, toss with oil and salt, and bake them. I also like them with lemon pepper seasoning on them- yum!

I just bake them whole in the oven (wash, poke with a fork, wrap in foil and place on rack, maybe 375 degrees or so until they're soft). Then I peel off the skins, slice them with a knife so they're not stringy, and mash them with large quantities of butter.

You can bake a few at a time and keep the extra ones in the fridge for a couple of days.

i roast them at 400 until they are overdone and caramelized. they have the best flavor with only course sea salt. if you need a bit of fat, i've put a tiny bit of toasted sesame oil on top, and it was especially flavorful. yummmm. one of my favorite things. so good with this http://www.cookusinterruptus.com/index.php?video_id=124. *love* that site.

I love sweet potatoes!

My 2 favorite ways to eat them:

-Bake in oven until really soft and caramelized. Mash with fork, add some butter, dash of salt, and sprinkling of brown sugar.

-Peel and then slice into thin slices. Dab with olive oil and then bake on both sides until soft and slightly crispy. Dip in ketchup.

Poke holes, cover with olive oil and rub with sea salt, bake in oven until carmelized and dripping sugar syrup (onto the foil you placed beneath it )

Take it out (after an hour or so a 375) throw in a little earth balance, maybe a dash of cinnamon or a touch of maple syrup. They don't really need anything. MEAL TIME!!!

I LOVE sweet potatoes!!

I just bought 40 lbs at my local HFS since they were on sale. So now we are eating them everyday.

I bake them till caramelized and ghee and celtic salt, and for extra health, I add a sprinkling of dulse on top.

What I want to know is what is the difference in yams and sweet potatoes? What I bought was labeled "yams".

What are called "yams" in the US are actually sweet potatoes. True yams are something quite different.

I read about it one time, it's a complicated history, but that's the gist.
