I am stew meat flunky. I do love it cooked in the crockpot with salsa verde for taco meat, though!

We sometimes make fajitas using stew meat! I just slice it into smaller pieces, fry it up with onions and peppers, and serve in whatever whole grain tortillas are your favorite. Cumin and hot sauce are a nice addition.

If you like Mexican, chile verde or mole either one would work with stew meat. When I hear stew meat, my first thought is always curry though. You basically want slower and wetter cooking methods to facilitate tenderness.

My favorite thing to make with stew meat is regular beef stew or Guinness beef stew.

This recipe is really tasty - esp with a fresh loaf of bread and butter on the side! It does take some time to prep though so keep that in mind (overnight marinating then browning all the meat pieces on all sides). My husband loves it!

Here's my new favorite stew; it's from Senegal, and it's simple and delicious! I came across this recipe when I also had an unexpected surplus of stew meat (venison, in my case), and I was just sick and tired of the usual suspects.

Mafe Stew:

-Dredge stew chunks in flour, brown in oil.

- Add 1 chopped onion, 4 minced garlic cloves, 2 large diced carrots, and one diced red pepper. Add salt and pepper and cook until soft.

-In a bowl, combine 1 cup of peanut butter (trust me here, it's not going to taste like "peanut butter stew" when it's done), with two cups of broth.

-To the meat and veggies, add 1 jar of tomatoes with juice, the broth/PB mixture, 1/2 tsp dry thyme, and 1 bay leaf.

-Bring to a boil, reduce heat and simmer for 1 hour (at least) stirring often, until meat is tender.

Mmmm, this is sooo good! The broth is incredibly rich and flavorful. You can either serve it over rice or mashed potatoes (not very traditional, but my personal favorite).

Do you have a good tried and true recipe for this?

Hungarian Goulash

1lb stewing meat cut into bite sized peices
1 clove of garlic minced
1 small onion diced
1 tbsp oil

3/4 cup ketchup
1 tbsp brown sugar
1 tbsp worcestshire sauce
1 tsp paprika
1/2 tsp salt
1/2 tsp dry mustard
water
1 tsp cornstarch in water

Heat oil in pot and brown meat with garlic and onion. Add water to cover the meat and simmer for 1.5 hours until tender. Combine remaining ingredients minus the cornstarch into a sauce then add to the meat. Cook for another half hour. Thicken the sauce with the cornstarch and serve over boiled noodles. Mom makes fresh noodles, I use store egg noodles.

I'm not Hungarian so I don't know how authentic it is, but I like it.
