recipes for almond milk pulp??

hi,

i've recently started making my own almond milk. i love it! my question is, what do i do with the pulp? i'm looking for recipes to use it in baking. i know some people dehydrate it and blend it into almond flour. do i need a dehydrator to do that, or can i do it another way? anyway. i'd love ideas...advice...suggestions!

I take my almond pulp and add a dash of olive oil and lemon juice to taste. Then I mix in some chopped herbs (dill is yummy). It makes a great spread on crackers or bread!
This works best if you peel the almonds before making the milk. With the skins the flavor/texture is really strange.

thanks! that's a great idea & sounds yummy! and yes, i've been blanching the almonds before making the milk. i had read the skins make the milk a little bitter, so the pulp is very smooth. thanks again!

I actually drink the almond milk with the pulp. I do have a vitamix though so it is REALLY well blended and smooth, but it's so good to eat the 'wholefood' when ever you can because there is still so much we don't know about how different parts of the plant work together for our benefit. It's also really filling, even though it feels like your just drinking liquid. I love it in a smoothie with a banana, date & carob - yummo!

that's a good idea to not strain it & use it for a smoothie! that's what i have for breakfast every morning, so it would be perfect! i don't have a vitamix, so if i drank it whole by itself - it would be too much like chalk, lol. i use a nut milk bag to strain it, otherwise it's just not smooth enough. but in a smoothie...heck, i could do that! thank you! a vitamix is on my list to purchase though, so i'll try it again when i receive it.

Does the vitamix really work as well as I hear? I've been dying to get one & my blender broke recently!!!

OP -- I usually make a "cheese" with the pulp -- nutritional yeast, dash of salt, spices, olive oil... super yummy!! I also mix it in smoothies or make it into a desset -- mix with some sugar & coco (or melted chocolate or carob) and roll into little balls... you can cover the outside with chopped nuts or coconut!

I have a vitamix too and it does an awesome job with the almond milk. You cannot compare using a regular blender vs the vitamix. With my regular blender I would have to strain the pulp. I don't strain with the vitamix. The almond milk is thicker but its amazing. I always felt bad b/c I had so much pulp and I could never use it all up. Often I put in entire apples,oranges with the seeds into the vitamix and it totally blends up the seeds. It works better than I could every have imagined. Worth every penny.
