Does anyone have a good recipe for a cake that's not too sugary? Also, preferably, that's not too hard to make?

I might have a recipe that'd work for you. It is for Carrot-cake bars, but it would work nicely for a sheet cake (I don't think it would work for round cake pans). The only sugar the recipe calls for is 2/3 c of brown sugar. It is made with whole wheat flour and oats.

I made the applesauce spice cake from the Joy of Cooking, and used brown sugar. It turned out really yummy! The most sugary part was the cream cheese frosting, but DD was way more interested in the cakey part instead of the icing anyway .

I made a yogurt "cheesecake" for my son's 1st b-day.
All I did was strain yogurt (goat's but cow's would work just as well) in cheese cloth over night which made it similar to a soft cream cheese. I put it in a nice dish and then decorated it with his favourite fruit, no sugar at all. He loved it!
I got a lot of hassle from others for not making my son a 'real' birthday cake but I figured he didn't know any different and he devoured what I did make.

I made a regular carrot cake with cream cheese icing. She had maybe two or three bites of the cake (no icing). To me a first birthday cake is for adults so I just did a regular one and then rationed DD's cake consumption as I would anything that was sweet.

I'm a terrible baker, so I'll probably be baking cakes all week until I find one that works.

I ended up making muffins but I've had a number of friends use some of these recipes with good success

I took a box carrot cake and just added a can of pumpkin to it. DD didn't really eat very much of it and all of the adults thought it was delish!

I'm experimenting with this recipe I found online, with a cream cheese frosting.

Pumpkin Apple*Harvest Cake
By Cait Johnson, author of Witch in the Kitchen

INGREDIENTS

1 cup cooked or canned pumpkin puree
2 large eggs, beaten
3/4*cup organic sugar
3/4 cup unbleached all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon ground ginger
1/2 teaspoon salt
1/2 cup chopped apple (or grated)
1/2 cup chopped walnuts or pecans
Whipped cream or confectioners’ sugar for topping (optional)

1. Preheat oven to 325F. Prepare an 8-inch round cake pan by greasing and flouring it.
2. Combine pumpkin, eggs, and sugar in a large mixing bowl. Add flour, cinnamon, baking powder, ginger, and salt, stirring to combine. Add apples and nuts, stirring again. Pour mixture into prepared pan.
3. Bake 20 to 25 minutes, until a cake tester inserted in the middle comes out clean.
4. Cool the cake, still in the pan, on a wire rack for 10 minutes, then invert the cake onto the rack, remove pan, and cool cake completely.
5. When ready to serve, turn cake on to a pretty plate and top with whipped cream or confectioners’ sugar, if desired, or serve plain.

i have a friend who made her 1 year old a "cake" which was a whole wheat roll with hummus frosting! ha ha.
well...it would eb easy to "bake!"
