Freezing vegetable soup

Okay, I've cooked and frozen veggie soup for years, and it's okay.

But I'm planning a huge feed the freezer weekend to get ready for baby, and I'm wondering- can you just freeze veggie soup uncooked? Like, mix all the veggies (probably mostly frozen veggies in this case, since I'm going for convenience), broth, tomato sauce, etc and then freeze. Then pull it out at a later date, maybe add a bit more broth/water and cook on the stove or in the crock pot?

I won't add potatoes or pasta to it, since that never seems to freeze well.

But is there any reason that freezing uncooked veggie soup is going to fail miserably?

You could but wouldn't you save far more time if you really did make the soup and freeze it that way?

Just pull out a container and heat it up-that saves me far more time-get it out one day warm it up the next, no need for cooking (unless you add the pasta) and with pasta, I find small pasta or abc's freeze with no problems.

Hmmm, you have a good point. I just always feel like the veggies get a bit mushy when I cook first and then freeze them.

But I suppose the point of this whole endeavor is to save me time in the future, not right now.

I have never had a problem with veggies even tatoes getting funny.

Like I said, I do use only small pasta, large-noodles tend to get mushy. I do at least a dozen soups a year frozen (a batch is at least 10 quarts) I freeze with rice as well. The only soups we find taste off are cream based soups (fish and cream) for my tomato soup I freeze the base and add the cream when I heat it up - other then that we have no issues with frozen soup- we eat at least 2 serving a week of frozen soup.
