What's for dinner?

I'm not sure yet here, give me some ideas

Wild Alaskan King salmon.
salad with calamata olives, red peppers, romaine, tomato, feta cheese and sliced avocado.
whole wheat couscous
broccoli rabe with garlic and olive oil

It WAS going to be spinach and feta in phyllo, until I just realized I forgot to buy feta. Remembered the spinach, the dill, the phyllo...everything except the one ingredient that makes it tasty. Sigh.

So it looks like it will be good ol' penne pasta with spring vegetables. A stand-by that appears about once a week at our table.

Yum... Can I come to your house for dinner???

It is just ds and I tonight. We are low on groceries, and I have no ambition. Ds has been snacking on fruit all evening. I think I'll heat him up some ww pasta with pesto, and spinach or some of our miso soup we have left over.

As for me...I just spoiled my dinner by eating some jelly belly jelly beans.

Mmmm...I've been dreaming of spinach pie. Yummy! That is on my list of things to make within the next week! Feta is an essential! How do you make yours?

It's just me and dd tonight. DH is at Wing Night with the guys. I'm just about to start making pizza. I'm thinking diced ham, onion, mushrooms and spinach for the toppings.

This time around I was going to use a couple of packages of frozen spinach (on special at the supermarket), but I often use fresh instead. Thaw, steam lightly and squeeeeeze out as much liquid as you can. A great trick is to place the spinach between two plates (or same-sized bowls) and squeeze.

Mix the spinach with 1 Tbsp. grated lemon zest, 2 Tbsp. chopped fresh dill or mint, 1/2 cup to 1 cup crumbled feta and 2 lightly beaten eggs, and salt and pepper. Sometimes I'll add a little chopped green onion or sauteed cooking onion. The thawed/steamed/drained spinach didn't look appetizing. I decided to sautee 1 chopped onion in a little olive oil until tender (less than 5 min.). Then I added the spinach and dill and sauteed for another 2 or 3 minutes. Everything took on a better, healthier look. I removed it from the heat, cooled it a little, and added the lemon zest, ground pepper and feta and beaten eggs.

Then I layer 3 sheets of phyllo, brushing each with olive oil. I place about a quarter of the spinach mixture in the middle at one end (leaving a couple of inches of phyllo on each side, and then roll it up kind of like a burrito. Repeat, making 4 pies in total. Brush them with olive oil, and bake at 375 F for 10 to 15 minutes until golden.

That's tomorrow's dinner now! To be served with a lightly sauteed tomato salad. I don't normally buy tomatoes this time of year, but the supermarket had a nice little container of heirloom mini-tomatoes on special. I knew they would make a nice side for the spinach pies. I halved them, sprinkled with salt, pepper and fresh thyme and sauteed them in olive oil and 2 crushed garlic cloves for a couple of minutes.

Im so jealous of you ladies... I treated DS to dinner at Village Inn, it was 'free pie' night....

Okay, dh picked up feta on his way home, and since he and dd really wanted spinach pies, I made them. Even though it meant we didn't eat until late. And then I felt guilty about the leftover phyllo, so I ended up making an apple strudel too.

I've posted again to say that I edited the recipe I wrote out upthread, in case anyone was interested - I don't want to lead anyone astray.

Just took the meat off of my chicken I had in the crock pot since yesterday, shredded it and it's waiting for chicken and gravy on toast.
I added the bones back in for super rich broth. I can't wait till dinnertime.

That sounds fabulous!

Tonight I'm thinking I'll shred the roasted chicken thighs we have left over from earlier this week and simmer w/ some salsa, tomato sauce and taco type spices (cumin, chili powder, oregano, garlic). Then I'll make burritos w/ the chicken mixture, some re-fried beans, cheese, and a touch of sour cream. I'll also attempt to hide some spinach in there and throw some diced raw onion into mine.

Or I'll make broccoli cheese soup w/ what's left of the broccoli I got on sale and dice up some of the spiral sliced ham we still have to toss in. I'd serve that with slices of the bread I just pulled out of the oven.

I can't decide.

We are having a big salad with mixed greens, walnuts, pears, dried cranberries, bacon and eggs, and toasted whole wheat bread slices. I make a tarragon vinagrette for it - which is easy, just olive oil, white wine vinegar, dijon mustard and tarragon flakes. We also have blue cheese crumbles on the side for DH. (DD and I are dairy free so we separate them!)

my cupboards are bare
Dh and I will have fish tacos and kids either beef and spinach ravioli or leftover spaghette. I'll make a salad both veggie and fruit. I really, really need to get to the store!

Tonight we're having turkey sandwiches and soup because my formica counters and old sink were removed today in preparation for granite counters and tile backsplashes-yippeeeee, I've been waiting years for this!!!!
The added plus is I can't really cook for a week so it's take out, dinner out and sandwhiches.
