Need ideas for meals and snacks

And I have a somewhat limited ingredient list to work with. Please give me ideas! I will be forever grateful Bland is ok, I've gotten used to it I can doctor up part of it for dp and ds1.
(ds2 is sensitive to salicylates. I'm on an ED and haven't added everything back yet, but it seems like enough to start making meals instead of just one or two ingredient snacks all day).

Here's what I can eat:
tofu
red lentils
black beans
maybe other beans- not navy beans or green lentils.

all grains except corn - quinoa, millet, rice, etc
(haven't tried wheat yet, but will this week- I think it will be ok, so pasta and tortillas recipes would be good)

cashews
eggs
dairy

potatoes
bamboo shoots
cabbage
brussels sprouts
rutabaga
iceberg lettuce
cauliflower
chives
leeks
celery
asparagus
green beans
peas
kale
carrots (limited amounts)
spinach (limited amounts)
pumpkin (limited amounts)
very small amounts of fresh tomato

lime
lemon
canola oil
sugar
salt
Bragg's
parsley
garlic
tabasco sauce (limited amounts)
basil (limited amounts)
chili flakes (limited amounts)

And that's pretty much it for now.
I'd love vegan ideas, but egg and dairy are fine too. Anything to replace the meat I sometimes eat

So far I've thought of:
Tofu stirfry- braggs, carrot, asparagus, bamboo shoots, with rice
bean and cheese burritos
Baked pumpkin ziti, modified
grilled cheese (if I can find yeast free bread) with baked fries, either potato or rutabaga
Bean "alfredo" on pasta
Lentil kale potato soup
some sort of veggie burger with lentils or black beans- need to find a recipe

Only 3 things are really jumping out at me right now.

Tofu scramble with garlic, braggs, & kale (maybe a bit of carrot too), served with a grain or potatoes
Red lentils with leeks, asparagus, lemon & garlic served over rice or pasta

ETA: I thought of 1 more. Cooked rice mixed with eggs, kale & garlic then baked.

You could do a stir fry with lentils (I like french for this, they hold up well), potatoes and whatever veggies you feel like and toss with quinoa, rice, etc.

Breakfast tacos are a favorite of mine - homefried potatoes, scrambled eggs, cilantro, tomato, and a little something spicy, all wrapped up in a tortilla. You can add black beans, vegetables, cheese, whatever you want.

At the end of the week I often do "big bowls" - a big bowl of whatever grain, bean, and veggies I have left. Use up herbs and olive oil to make a sauce to drizzle on top and you're set to go. You can use absolutely anything for this. Sometimes I leave some veggies raw and chop fine, others I sautee or steam. Whatever works for you.

You can make all kinds of soups from that list - go for it!

Those are all right up my alley! Awesome! Thanks I'm so excited to have some actual meals to make!

I'll have to work on soups- I'm used to cooking with loads of tomatoes and lots of spinach. I don't think I've cooked soup without tomatoes for years! I'll have to experiment!

Last night I had black beans, lime, and cilantro over quinoa. I was surprised at how good it was!

I often use spinach & kale interchangable when cooking. When you want to use spinach, try some kale instead
