Leftover oatmeal

Is there anything to be done with leftover oatmeal?

oatmeal reheats great! add a little extra water to a pot and stick the oatmeal in, stir until it's hot. (I'm sure it could be done in the microwave but I've never tried)

I sometimes make oat cakes - just fry up smooshed patty in butter.

I mix in a scrambled egg and make pancakes.

I add it to bread or muffins.

I make 'oat cakes' too I add a beaten egg and fry them like pancakes in butter or coconut oil. Serve with a little maple syrup and/or fruit.

My favorite chocolate cake recipe in the entire world has quite a bit of leftover oatmeal in it!

My mum always used it to bind veggie burgers together.

I just eat it cold! Sometimes I do it on purpose: make a bigger pot of oatmeal with raisins and cinnamon or maybe shredded apple or shredded zucchini or frozen blueberries. Then scoop it all into a bowl, let it cool, cover, and put it in the fridge. Voila: yummy health oatmeal in a hurry.

I always make extra, and then I just keep it in the fridge and reheat the next couple of mornings. That way we can have a hot breakfast cereal on rushed work/school mornings!

If you're having leftovers on a regular basis, you could switch to Baked Oatmeal (check this forum for the really big thread), it makes cut-able squares.
