I realize there is a million simple things to bring to a pot luck when you are vegan cooking for non-vegan people.

I love a good church potluck.

What I love even more is wednesday night post presactified liturgy potlucks because everyone has to cook vegan. which means we have a lot of hummus and some greek dish and whatever I cook. and it is a good time. I meet people I have been going to church with forever and never really talked to. all while eating vegan food. So I want to make something really really yummy.

So far I have brought
greeky green beans
borscht
smokey black been soup, crispy tortilla strips and choclate crackcakes..I mean cupcakes
falafel with home made pita and fixin's
green bean cassarole and chocolate chip cookies

I think this is the last one.

hit me with your best comfort food, yummylicious pot luck pleasers

I should also point out that my kids hate my cooking and this is the only time people ever tell me I am a good cook and eat my food. So I love doing this

Do you have the recipe. I was so close to buying that cookbook the other day but my membership at barnes and noble had expired and I did not have enough money to get it without the discount.

I always steam them in my rice cooker veggie tray, and i think it helps to cook them more evenly only steaming 8 or so at a time. if you make them in advance, freeze them and resteam til hot as you want them and they are amazing! pair with a good salsa or guac and you're in heaven!!!

Do you have any good vegan lasagna recipes? I have had some noodles up in my cupboard forever (I can't remember what I ended up taking...oh yeah, pasta in a red wine sauce, stuffed mushrooms and cupcakes). The thing about those pot lucks is that we have to go vegan so they are thrilled I actually know what I am doing

black bean chilaquile (cheeseless, of course) has been a hit with lots of non-vegans I've made it for.

I use rice instead of chips for the bottom layer. Much better reheated that way. It's important to use GOOD salsa. I use homemade usually.
