Dessert for Easter

I need an egg free and wheat free dessert for Easter. I don't really care if it is TF for this occassion. But I do need a dessert that tastes good and more conventional for quests who eat the SAD diet. Any ideas? I thought about cheesecake, but it has eggs.

Strawberry pie with a nut or oat crust. The crust can be as simple as nuts or oats whizzed up fine, melted butter or CNO to bind, pressed into pie plate or springform pan and chilled. Soften cream cheese (and sweeten it if you like) to spread on as a first layer on top of the crust (chilled firm crust, very soft cream cheese, otherwise the cheese pulls the crust apart as you try to spread it), chill again to firm up the cheese, then top with sliced strawberries and whipped cream. You can also fold the strawberries into the whipped cream so it will hold together better when sliced (assemble that at the last minute or the berries will weep and it will be a runny mess), or you can bind the strawberries together with sweetened gelatin (I'd use one of the "natural" jell-o knock offs) and top with whipped cream.

We almost always have a strawberry dessert on Easter, because the strawberries in my region are just beginning to be ready around that time.

Check out no-bake cheesecake recipes, too - they're usually based on whipped cream cheese folded with whipped cream, no eggs required, and you can use any kind of wheat-free crust.

I think I just made myself hungry.

Thanks for the ideas! That strawberry recipe is something I will try when we have good strawberries...YUM!

I think I am going to try the no bake cheesecake recipe. I usually make a great pecan crust with just pecans, maple sryup and butter. This will work great. Thanks for the idea! I had no idea no bake cheesecake was without eggs.
