What's the best new recipe you've tried lately?

Thought it'd be fun to have an inspiration thread.

I made this last week to clean out the fridge - some leftover canned pumpkin was a great addition:

Well, it's not a recipe but I recently discovered fried leeks. They are delicious!
Seriously easy. Cut leek in half, slice in 1/2 in pieces and throw in hot oil. Remove when lightly browned and sprinkle with salt. I had them on a steak salad last night and butternut squash soup a few weeks ago.

YUM!

I've got a ton of leeks in the fridge - I'll have to give that a try.

My best new recipe lately was mole. I'd never tried it before because I was intimidated - but this recipe made it achievable.

We had Lemon Scented Quinoa at dinner last night, and it was quite good!

I followed the instructions exactly, even though boiling first, draining and then steaming seamed a little more convoluted than necessary. I was impressed by the light, fluffy results though, so it was worth it, and didn't really take any extra effort.

I served it alongside Garlic Thyme Chicken Breasts and some peas.

Salmon Moqueca (Brazilian Fish Stew)

Delicious! And not too troublesome. A good use for frozen salmon.

Creamy Swiss Chard Pasta off recipezaar is super scrummy. The recipe w/ my changes:

•1 lb swiss chard
•1 tablespoon olive oil
•2 garlic cloves, smashed
•1 onion, chopped
•2 large tomatoes, chopped
•¾ c sour cream
•1/2 cup milk
•1/2 cup parmesan cheese
•8 ounces fettuccine pasta, cooked according to package
•salt and pepper
•crumbled bacon or chopped ham, optional
1.Wash swiss chard, cut into small pieces.
2.Heat oil in large 2 quart saucepan over medium high heat, 1 to 2 minutes.
3.Add swiss chard, garlic and onion; cooking 1 to 2 minutes, stirring occasionally.
4.Add tomatoes, sour cream, milk, parmesan cheese, cooked fettuccine, salt and pepper to taste; stir well.
5.Serve warm.

I made these Chipotle Shrimp Tacos and they were amazing! My husband absolutely loved them I read the reviews and followed the suggestion to make a marinade out of the chipotles and lime juice and let the shrimp sit in that for a bit (I also halved the peppers since my 4yo can't handle super spicy). I served them in steamed sprouted corn tortillas with a generous dollop of guacamole. MMMmmmmmm. Now that I mention them, they are going on the menu for this week!

ETA oh and I used frozen uncooked shrimp - I never buy precooked shrimp I cooked them with the marinade after they sat a bit.
