Thought it'd be fun to have an inspiration thread.
I made this last week to clean out the fridge - some leftover canned pumpkin was a great addition:

I read the reviews and followed the suggestion to make a marinade out of the chipotles and lime juice and let the shrimp sit in that for a bit (I also halved the peppers since my 4yo can't handle super spicy). I served them in steamed sprouted corn tortillas with a generous dollop of guacamole. MMMmmmmmm. Now that I mention them, they are going on the menu for this week!
I cooked them with the marinade after they sat a bit.
