Switching to 'warm weather food'

Now that it is getting warmer, I am starting to switch over our meals to lighter, fresher options. Lots of veggie, pasta, fruit and potato salads, some sandwiches and wraps, BBQ, etc. I still make our soups, warm pasta dishes and some casseroles, but can incorporate more seasonal veggies.

A couple of my favorites: Fresh tomatoes, mozzarella, olive oil, bit of salt and pepper--either alone or on some fresh bread. Seriously, I could just have that for a meal.

Summer squash, black olives, tomatoes, onions, black beans, corn, green, red and hot peppers all chopped up together with a bit of hot sauce and/or fresh salsa, lime juice and some seasoning. YUM!

Anything BBQ by my honey with a big ole side of homemade potato salad and corn on the cob.

Loving warm weather food! All of it.

Corn on the cob is a favorite! We could eat it for breakfast, lunch, and dinner around here!

We had a warm spell and I got into the "warm weather" meals mindset. We've been grilling a lot more. During the winter, I venture out into the snow no more than a few times a month to grill. We've been eating on the deck, too, which I enjoy even more than the food.

Last night, which was the coldest it's been in a long time, we had one of my favorite spring/summer meals in spite of the cold... Insalata Mista with grilled Italian chicken in a baked salad shell. Last night I tossed the romaine lettuce with the bits of veg I had in the drawer - carrot, yellow pepper, broccoli, scallion, and asparagus - with gorgonzola, homemade croutons, and candied walnuts. This is so versatile since you can use whatever you have on hand. Sometimes I'll throw in bit of apple or some other fruit that we have on-hand.

Another thing we like when it's warm out is whole grilled fish. We have an international market that sells live fish - they clean and scale the fish right there and you take home truly fresh whole fish (which is rare in the midwest). I prepare this simply, which is very refreshing for the summer. Olive oil, salt and pepper, grill whole and then a squeeze of lemon when eating. I make some homemade scratch potato chips with this. This is dd's favorite dish.

Dh is from the Middle East and we start preparing a lot of the summertime, olive oil-based foods of the region.

Those are the favorites I can think of.
