3 year old = veggie strike - help! Recipes please!!

Hi there all,
my 3 year old is on a veggie strike...she will only earn corn on the cob, pasta sauce, potatoes and sweet potatoes.
I would really like her to try and eat some more, I have tried the pasta sauce thing (adding more veggies), both myself and the husband eat them, so she sees that.
I really want to get away from the whites (sugar/flour,etc) and get her to eat more healthily. Any suggestions/recipes please

Can you stick veggies in stuff, like spinach or peppers in quesadillas or under the cheese of a pizza? What about just really increasing the offerings? On the days I cook, I try to offer DD at least 4 different veggies a day, thinking she'll eat a couple of them. Some days she'll eat them all, sometimes just one. But the volume evens it out, it seems. She gets hungry right before dinner, so her appetizer is some sort of raw veggie (red pepper, celery, carrots or cukes), which she eats while watching a show while I make dinner. That alone usually gets 1-2 servings into her. Try different textures? I saw a recipe for root veggie chips at one point (beets, sweet potato, parsnips, etc). It looked really good... Guacamole? Counts as a veggie in my book. A couple of tablespoons of it with a few corn tortilla chips makes a good snack. DD is a big fan of crunchy stuff so I make kale chips (rinse and tear kale into pieces, coat with olive oil, sprinkle with salt, bake) and she'll eat a bowl full of it even though she won't eat kale sauteed in a pan. I've seen folks have good luck with tempura-like oven battered veggies too. Just keep trying. You never know what they'll like.

Add spinach purree to your brownies (between 1/2-1c depending on your recipe) and sweet potatoes to french toast (in the milk/egg mixture). tasty and nutritious, especially if you don't serve with crazy amounts of syrup or use in a very sugary brownies recipe.
