I have two cooked chicken breasts and had planned to do chicken caesar salads for dinner tonight, but then I decided to make this spinach salad with red onions, apples, and pecans in a sweet/tangy vinaigrette, and I don't think the chicken would taste good on that salad. I need to use it today, though -- what main course should I make that would go well with the salad?
If it were raw I could think of lots of things to do with it, but I usually just do casseroles or salad toppers with cooked chicken, and can't come up with anything!
