1 box Fantastic Foods falafel mix. 1 cup water. Olive oil spray. Waffle iron. 8 minutes a piece.

Um, wow. These were amazing. Why had I not heard of these?

Also, bonus recipes:

Tahini lemon sauce:
1/4 cup tahini
1/4 cup water
Juice of one lemon
1/4 tsp salt
1 clove garlic
2 sprigs of parsley
Blend in blender for about 1 minute.

Rose-vanilla ice cream (Adapted from the Vanilla recipe in Lick It!)
1 can full fat coconut milk
1 1/4 cups vanilla soy milk
1/2 cup granulated sugar
1 tbs vanilla extract
1 tbs rosewater
a few drops of red food coloring
Combine all ingredients, chill for 2 hours, then freeze in ice cream freezer according to manufacturers instructions.

So basically, it's a new way to cook falafel? Sounds interesting. I have a box of falafel in my pantry.

Did you just serve the waffles with the tahini sauce? I usually put falafel into salad or on a pita. I will have to try this.

The ice cream sounds interesting too. And it's non-dairy! Whoohoo!

I broke them into pieces and stuffed them in a pita with sprouts and a ridiculously overpriced sliced hothouse tomato, then drizzled it with the tahini sauce.

The ice cream is just absolutely amazing. I keep going back for just one more spoonful. Cathe is a genius.

I just popped in from new posts to say that I have a very similar recipe for falafel pancakes, except I usually make my chickpeas from scratch. If you make them thin/crepish, they're great folded like a taco with lettuce, cukes, tomato, yogurt, tahini, etc.

What consistency is the rosewater ice cream? I'd love to try that.

It froze really quickly (about 10 minutes) and was perfectly creamy after 90 minutes in the freezer when I dished it up.
