coconut oil recipes

Does anyone have any good recipes using coconut oil? If so would you please provide link or share here. Anything yummy, tasty, to use up my oil before it expires lol (or should I deep fry with it - anyone done that?)

CO hazelnut bark

1 cup CO
1/2 cup cocoa powder
4 tbsp honey or maple syrup
1 tbsp vanilla
1/2 cup toasted chopped hazelnuts (or other nuts, or no nuts! )

Mix CO, cocoa powder, vanilla and sweetener until smooth, then fold in nuts and pour into dish. Chill until firm and devour!
