Baking bread

All of my bread recipes seem to have 1/4 cups of sugar in them. I don't really want that much sugar in my bread so the last time I made it i only put 1/8 c. in. It seemed to affect the texture as well as the taste. I knew it would taste different....

Would you just substitute honey for sugar or lessen it and put up with the texture change?

Are you talking about yeast breads or quick breads? I have seen lots of yeast bread recipes with very little (like 1 T) of sugar. Quick breads usually call for more, but I have cut the amounts in half successfully. Tehrea er two bead/cake recipes with no sugar on this page

Did you reduce the salt as well? The salt/sugar ration is very important as it impacts the flavor as well as the yeast performance. Substituting with honey usually does change the texture, because it changes the wet/dry ratio, but you can always add a little more flour if needed.
