Greens, Greens, Greens!!!

Aren't greens great?!

We are trying to eat more as they are just so full of goodness.

I can't believe I never tried arugula until now. It is so yummy. Our goal is to have greens everyday, perhaps 1 raw, 1 cooked. And rotate what we use.

What greens are you using, and how?

We use a lot of greens - and I can't wait for our CSA to begin!

I think I probably use collards & chard most of all because they're so versatile. I always chop collards into every soup I make, sometimes I puree them in the broth, sometimes not.
We also love to have chopped collards in our eggs with bacon, onion & cheese.

I recently made a dish with chard & sardines that a friend had introduced me too & it was a BIG hit.

I'm not as crazy about kale, something about the texture, but we use it when it's at our CSA. The kids love kale crisps.

We do need to branch out more. We always use what we get from our CSA, Asian greens, bok choy, etc, but they're not my go-to greens.

The only greens we eat raw are salad greens.

I adore arugula cooked or raw, just love it! I esp. love a salad with bacon, egg, and any veggies that sound good that I have on hand and maybe an avocado, some raw milk cheese....mmmm!
I also LOVE broccoli rabe, it's bitter, but I like that. Esp. with tons of garlic.
I actually like Kale, too. It's really good in soups like white bean, ham or the chicken soup recipe I posted a long time ago....
I love greens, too!!!!

WE LOVE ARUGULA especially wiht blue cheese...yum!

Ohhhh please share the chard and sardine recipe! Dd and I love sardines! We usualy eat them mashed into brown rice, garlic and avocado...weird combo right

I am surprised that you all love arugula so much! I've tried it and found it soooooo bitter!!!! Is there a way to eat/cook it so that it is not so bitter?
