What are you making for Easter celebrations

Dh and I don't really celebrate Easter, we usually just end up at dh's families, but M-I-L lost her father last year around this time and the family has decided to stop Easter dinner.

So I thought to brighten my MIL's day I would make dinner at our house.

I'm thinking:

-black olives marinated in orange/garlic
-pickled beets
-carrot soup
-spinach salad
-lemon pea rice
-green beans sauteed w onions/garlic/white wine and tomatoes

POSSIBLY-an egg dish, Im thinking a dairy free potato frittata(Im vegan but everyone else eats eggs. And I think it will make a heartier meal for my inlaws who are huge meat eaters!)


Are you preparing anything special?

We're having people over for spring feast-er - MIL bringing traditional meat, SIL making family traditional 'breakfast pizzas' (with eggs & veggies for me & dd).

I'm thinking about a zucchini/chickpea/rice filo pie and dh talks about making a corn flan. Maybe fruit kebabs too.

Also thinking about a homemade chocolate pudding.

I have not eaten meat in a month,and was just thinking of what I will eat on easter.

I was thinking of a lentil loaf or some falafel(chick pea burgers) and some baba g.(eggplant spread).I love mushrooms,so probably those on the side with zukes.If I am really in the mood(to roll) I will make some veggie stuffed grape leaves with rice/currants/dill.Dh's mom made that so well.Also,a layered dish of fried potato and eggplant with peppers,tomato,garlic,lemon sauce added...then baked.Again another MIL dish I loved.

I am getting hungry now.


I will probably still cook meat for the rest of the family.

Lucky me: we're meeting up with family at a steakhouse Looks like I'll be dining on salad and french fries.
