Here's a nice set of information on different cooking fats, which represents one point of view on the issue, albeit a non-mainstream one:

I tend to use oils in accordance to their smoke point. "vegetable oil", canola oil, peanut oil, safflower oil, grapeseed oil for frying.

I use Olive oil in most applications

And aromatic oils with very low smoke points like walnut, sesame, hazelnut, etc in dressings and raw presentations.

Butter I spread on toast and melt on popcorn and on pasta. I don't usually "cook" with it at all.

This is what I keep in the house:
Refined CO - deep frying, often blended with lard
Unrefined CO - pan frying, baking
Local Olive - salad dressings, finishing sauce, dipping sauce
Walnut - salad dressings
Sunflower - mayo
Lard - baking, deep frying
Butter - baking, pan frying, flavoring
Duck/Goose fat - mayo, roasting veg
Bacon grease / drippings - whatever I feel like, mostly pan frying

safflower oil is super healthy and full of vitamin E they have a high heat and lower heat one i use it for everything!

its great for your skin

great for frying, putting on salads, or mixing with other oils that arent high heat. say i want to pan fry some fish i can do it in the safflower oil then at the end drizzle in some EVOO for taste!

it supposedly helps manage weight and burn fat too but idk about all of that.
