salad dressing recipes?

anyone have some good ones out there? my dh makes a honey mustard that's pretty good, but i like variety. We're doing soy free/dairy free atm.

This makes a nice vinaigrette:

olive oil, red wine vinegar, small clove of garlic (or shallot), minced, a little Dijon mustard, salt, pepper.

my absolute favorite & most delicious salad dressing on the planet is vegan ranch. you do need to use soy milk, but maybe you could substitute with unsweetened almond milk? (although i've never tried...i'm sure it could work though).

1 cup vegenaise (original)
1/2 cup soy milk (i like silk soy for this recipe, but you could supplement with almond)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon black pepper
2 teaspoons parsley, chopped (but i actually use dry flakes).

whisk it all together & refrigerate. if you want to use it as a dip, use less soy milk. it seriously is so awesome & delicious. it's my favorite.

ETA - i just made it with silk almond milk & it's really yummy too! just use less than a 1/2 cup imho...it was too thin & i had to add more vegenaise.

Have you tried Fig Vinegar? It's amazing. It's a very thick, kind of sweet balsamic vinegar. I just use that and some good pumpkinseed oil on my salads, and I can't get enough of it!

I also really like a lemon-garlic dressing, but I can't remember the recipe right now. I got it from Claire's Cornucopia cookbooks, and I think it's the juice of 3 lemons, 3 cloves of garlic minced, and some light olive oil, plus salt and pepper. YUM.

lakeruby, that sounds good!! oil and vinegar combined in different ways.
the ranch vegan dressing sounds good too- i used to LOVE veganaise, but am not sure i can eat it right now- but when i can, mmmmmmm...

I find the best way to make or ruin a dressing is the vinegar. I adore a good white balsamic. Either Alesso, or Trader Joe's is fabulous.

I just do, tsp minced shallot, tsp dijon mustard, 2 tblsp white balsamic, however much oil you like for those proportion (I use 1:3 with white balsamic) pinch salt and pepper.

balsamic vinegar
evoo
honey
garlic
s & p



lime juice
evoo
honey
s & p
pinch of cayenne

I love love my mom's caesar salad recipe! I think it probably is not anything like an authentic casesar, but awesome nonetheless:

1/4c evoo
juice of 1 large lemon
3 cloves garlic minced
dash of worcestershire sauce (is that soy?) I have had it w/o and still good
s & p let this sit so the garlic infuses for at least 30 min

For a caesar salad, toss this with your lettuce, croutons, and then add 1/4c parmesan cheese ...well, that's dairy, but again not necessary!

It is incredibly garlicky, but oh so good!

This is very similar to what I do except I use a bit more garlic, and I prefer sherry vinegar to red wine vinegar. Sometimes I use lemon juice with white wine vinegar instead. Also our mustard is usually spicy brown deli mustard instead of dijon. My dad likes to add a bit of worchestshire instead of the mustard.
