anyone got any great vegan crockpot recipes?

We're DIYing a remodel on our kitchen and the big stove is out of commission so I thought I might dust off that old crockpot, but I need some recipes. We're not really vegan, but vegan will usually work for us. DH has some food intolerances and can't do any dairy (no cheeses, though the kids love them). He also prefers non-meat dishes. I try to avoid too much soy, but do a little bit of tofu here and there. I can't do seitan too much. DH is also not great with huge amounts of beans. I'm not sure these restrictions really work with a crockpot, but I thought it was worth a try. FWIW, a few eggs are okay (though I'm not sure eggs would be very happy in a crockpot). Anybody got anything? Links to vegan crockpot recipes?

I got this recipe from an amazing woman & actually just made it the other night. Since it's been cold around here I felt a nice slow cooked soup was well in order.

~Vegan Vegetable Soup~

â– 1 stalk of celery, chopped
â– 2 large onions, chopped
â– 1/2 to 3/4 head of cabbage, chopped *(or buy a package of pre-cut stir fry veggies that includes cabbage)
â– 6-8 carrots, sliced
â– 10-12 Baby Dutch Gold Potatoes, cubed (any potatoes will work - if you do use larger potatoes, cut the quantity accordingly)
â– 1 can stewed tomatoes
â– 32 ounces vegetable broth
â– 1 cup water
â– olive oil
â– spices, seasoning, pepper to taste

Cut veggies and layer them in the crock pot. Drizzle olive oil as you go & sprinkle seasonings, pepper, spices atop the oil. Mix together so it starts blending nicely. Add can of stewed tomatoes, veggie broth and water.

**Add more water as the day progresses and it cooks down (depending on how thick you want it).

Cook on high for 7-8 hours or until veggies are soft to your liking.

Serve with bread or biscuits. Biscuits easily made with Bisquick (which is vegan) just use soy milk instead of cow's milk to keep it that way.

Thanks, y'all!

It got hot here so now I'm just feeling like salad so that might be okay! I'm sure something hot will be good at some point, though.

I started by thinly slicing 4 yellow onions into half-rings. I put a tablespoon each of Earth Balance margarine and olive oil into the pot, and added the onions. I turned the crockpot on high, and wandered by to stir it, and add a little bit of white wine every half hour or so for about 2 hours. (Obviously one could have done that faster on a stovetop, but that wasn't an option).

Once the onions were carmelized, I added 2 tablespoons of flour, a teaspoon of dried thyme, and stirred it together, and put the lid back on. After about 10 minutes, I stirred again, and added 6 cups of water, 2 teaspoons of soy sauce, a teaspoon of Better than Boullion Vegetable base, a teaspoon of Vegemite yeast spread (which is FOUL, FOUL stuff as a spread, but makes an excellent faux-beef boullion), a couple of tablespoons of Nutritional Yeast, and a splash of brandy. Then I let it simmer on low for several hours. I think I might have added a little more salt or soy sauce when I dished it up.


Honey/Maple baked lentils work well in a crockpot too-
1 tbs olive oil
1 diced onion
1 cup lentils
2 cups water
2 tbs soysauce
2 tbs honey, agave, or maple syrup
1 clove crushed garlic
1 tbs yellow mustard
1/2 teaspoon ginger

I'm sorry but as an Aussie I take deep offense to this comment!!! We are weaned on Vegemite on toast - a fantastic source of all B vitamins including Vitamin B12 - at least 90% of Aussies would eat it EVERY day - there's barely a lunchbox at any school with out a "veggie sandwich" in it.

Of course this opinion is coming from the US - who gave the world such culinary master pieces as KFC, Mc Donalds, chitlins & *white*??? gravy so I shouldn't be suprised should I
