Help! Sausage & Eggs..anything exciting?

Dinner needs to be in about an hour. I have one pound of sausage and DOZENS of eggs!

Besides frying up the eggs and teh sausage....and having Ezekiel bread/butter on teh side...is there anything else to do that's NOT hard, too involved and I can whip together FAST?

A strata? If you have any greens or veggies you can throw those in too.

Fried Rice with Eggs would be a good idea. Drop some vegies in as the previous poster stated. You can cook the sausage separately then slice it up throw them in to your dish that has your Fried Rice with Eggs and whooola!! You have a meal to serve within no time.

Custard bowls:

Take a ramekin and crumble sausage in the bottom. Add two eggs mixed with milk, salt and pepper. Top with cheese and bake for about 10 minutes or until the eggs are set.

Serve with potatoes.

The Brits do something called Toad in the Hole, its basically eggs and milk and some flour mixed together and baked in a skillet with sausages "poking" out. Its pretty yummy! I'm sure you could google the recipe...

Y'all are great! THANK YOU!

We went ahead with fried sausage and fried eggs topped with cheese and salsa. Some Ezekiel bread/butter/honey. Oh, and pure MI maple syrup!

But I have these filed in the back of my mind now!
