My kids will eat flat leaf kale right out of the garden!

For a dinner, I cook up some good bacon and then saute the kale slowly in the left over bacon fat (we get pork by buying 1/2 a pig at a time, so I usually have decent bacon). Then I cook up some polenta w/cheese stirred in. Plate the polenta, add some kale, bacon pieces, maybe a sprinkle of cheese. It's extremely filling.

Oh my , that sounds sooooo lovely! I will so try that soon!

I love to add to soups. I REALLY love to add to white bean soup w/diced sweet potatoes, and smoked goat summer sausage. MMMMM!

I also love kale chips, but MUCH prefer mine in the dehydrator. Our fav kind is Emerald Sesame Kale chips. Cut up your kale (remove ribs!--the only greens ribs we eat are swiss chard) and put in a huge bowl so you have lots of room. Add lots of minced fresh ginger and garlic. Add soy sauce or tamari, rice vinegar, and toasted sesame oil and massage that kale REALLY well. Add in some toasted sesame seeds and dehydrate as usual. ***this also great as is, w/out dehydrating. Makes an awesome salad. I used to cook my Emerald Sesame Kale, but found that just massaging the ingredients in is so much better!!!***
