What is for Easter Dinner?

I'm pretty sure I'm cooking this year. So far I was thinking of a ham, mac and cheese, asparagus, and carrot cake for dessert. I'm thinking I need another thing or two.... hmmm.... ideas?

My mother is going to roast a turkey. I prefer lamb, or possibly a ham, for Easter.

To your menu, I would add:

- a green salad with some roasted sweet potato, pepitas, sliced red onion, and orange segments with a balsamic vinaigrette.

- Lemon Scented Quinoa or couscous or skillet roasted potato

- medley of grilled vegetables - red, yellow and green bell peppers, zucchini, cherry tomato, etc. with roasted garlic and chopped fresh basil

Hi Steph, your menu looks really good so far. How many are you cooking for?

If the meal is for quite a few people, I'd probably do another smaller joint of meat such as roast lamb and do a pasta or potato salad as well.

For desert, a carrot cake sounds great and how about doing something quite light such as a cheesecake or a lemon tart? I'm cooking as well this year and I'm going all out with my cake, it will be a themed Easter cake complete with marzipan chicks!

I'd do a salad or some kind of potato dish.

We're going to my mom's for lunch and she's doing a ham and who knows what else. I'm bringing scalloped potatoes.

We're having dinner for mil and I'm not entirely sure yet. Not ham definitely.

Thanks for the ideas! I'll probably add a salad and rolls (store bought, I don't want to stress myself out too bad since ds just had surgery and is having a rough recovery).

I know for sure it will be me and dp (and ds but he's on a limited diet right now because of his surgery so I'm not sure what he'll eat.... maybe I'll make some mashed potatoes since that's something he can eat). DP's parents may or may not join us. They are going out of the state today and coming back Sunday so she wanted to just give us money to pick up a meal at Honey Baked Ham. I told her I was cooking and her and DP's dad were more than welcome to join us. Her response to that was "well, maybe we just won't be back in town in time for dinner so we might just eat on the road". Whatever We've been having a lot of issues with her lately anyway so I'm not going to argue with her.

If it's me and DP only then we'll be eating leftovers for awhile. LOL!

We do something similar to this all spring/summer/fall. We love our grilled veggies We just had zucchini, bell pepper, onion and mushrooms grilled with steak last night. YUM!

I am cooking two easter dinners and a brunch!

Dinner #1:

Prime rib with red wine au jus
carmalized onion horseradish mashed potatoes
strawberry spinach salad with herbed balsamic vinegrette
grain free brownie with raspberry coulis

Brunch:

coconut flour triple berry muffins
A bacon explosion roll:

Dinner #2:

Ham baked in garlic herbed beer
roasted garlic new potatoes (the most amazing potatoes in the universe)

(I use butter instead of olive oil, and omg they are SO much better with butter!!!)
tropical "ambrosia" spinach salad (pretty much all the things you'd find in a marshmallow salad, mandrin oranges, pineapple, grapes, on spinach, with a coconut cream dressing. Tastes SO much like the marshmallow salad, but healthy!!!)

Oh wow, lil earthmomma...that all sounds AMAZING!!! Have you got room for one more??

We are going to my Dad's with my sister and her boyfriend and my stepmum, sis and I are doing a course each...sis was talking about doing various homemade pate type things (a smoked salmon one, potted shrimp and a meat one) with homemade breads, then stepmum is doing beef rib roast with veg and potatoes I would imagine and I'm making hot cross bun bread and butter pudding (with homemade, soaked hot cross bun loaf) with custart and/or creme fraiche.

Is it bad that I haven't even thought about it? ugh. Maybe I'll cook a ham...

Eta: hubby brought home a ham, so now I'll be re-reading this thread for yummy side dish ideas.

I'm not sure if I'm doing anything special.

My mom's standard menu was:

Ham
Scalloped potatoes
Brussels sprouts (or broccolil? I can't remember - she hasn't done Easter dinner in quite a few years)
Salad or raw veggie plate

Dessert was variable, and I can't really remember what we had. (I'm pretty sure I did my usual Christmas dessert at least once - vanilla wafer crust, middle layer of whipped butter, egg and icing sugar, and top layer of really stiff whipped cream with drained, crushed pineapple folded into it.)

Four of us, plus my dad:

Chicken baked over a mix of sliced potatoes, turnips, carrots, celery, onions, mushrooms and rosemary. The chicken drips down onto the vegetables and it's divine. Not very 'spring' like, but we all love this dish.

Strawberry shortcake: scones from a mix, sugared strawberries and whipped cream.

Yes, we're having Swedish meatballs, homemade spaetzel, steamed corn, spinach, and rolls.

For dessert, I will be making a triple layer coconut cake I found in Better Homes & Gardens (a friend was supposed to send their family recipe but it hasn't arrived yet, boo!).

We're headed over to Nana's house, and I'm told she's having ham, brussel sprouts, cauliflower, spiced applesauce and rolls (store bought, invariably - don't know why she doesn't let me make them). Oh yum. Everyone's menus sound fab!

We don't celebrate Easter but have been invited to a friend's place tomorrow. We will be bringing dessert which will be the Nigella Lawson Easter cake - it's a flourless chocolate cake leavened with egg whites. Then you spread a choc cream on top and sprinkle with candy coated choc eggs.

Tonight we have our easter dinner (of sorts). It was:

Free Range Roasted chicken
Stuffed with basic bread/onion/garlic/herb stuffing
Mashed Potatoes
Roasted Broccoli
Pan juice gravy

Homemade Strawberry icecream (got an icecream maker a couple of weeks ago!)

My MIL is making it. I think its ham and some kind of sweet potatoes. Not sure what else.

Very nervous though.

I'm making:
-Hamloaf (has anyone besides me and my family ever heard of this? Everyone, my fiance included thinks I'm nuts, but I love it!)
-garlic kielbasa (since my fiance thinks the hamloaf idea is horrific)
-Scalloped potatoes
-sauteed bok choy & watercress (because all the other green veggies at the store looked sad)
-banana bread (if I have the energy to make it)

I just finished the last of my (Godiva) Easter candy.
