Yes, I have heard of hamloaf! It isn't my favorite but I think it's fine.

-Scalloped potatoes
-sauteed bok choy & watercress (because all the other green veggies at the store looked sad)
-banana bread (if I have the energy to make it)

I just finished the last of my (Godiva) Easter candy.
Please share the recipe for this mysterious hamloaf!

I've never heard of hamloaf either.

We go to the Chinese restaurant for Easter. I love it!

The first year were were married I made ham, mashed potatoes, green beans, salad, rolls, etc. I put butter in little butter molds and made butter roses and little butter fleur di lis! I was a newlywed.

The second year we were married, we were running late, missed the fancy Easter brunch at the nice restaurant we were going to go to and the only other place serving food that day was the Chinese restaurant. We enjoyed it so much, we kept doing it and that became our Easter dinner tradition, except for a few years we went to MIL's for Easter dinner because she wanted to host.

Easter means eggrolls here!

I really enjoyed reading everyone's menus!

We had Easter lunch because my mom had to leave this afternoon for a biz trip. We had spiral ham, asparagus with melted butter and lemon juice, a wild rice dish (mushrooms & onions, mixed with some white rice to stretch it), and green bean/cheese casserole (no soup here). Cheesecake with strawberries for dessert.

We don't do a big extended family thing for Easter, so it's just us and we're buried under moving boxes right now (moving on Wednesday). So we're just grilling hamburgers, asparagus, and potatoes. Yum! Oh, and strawberry shortcake for dessert.

DH and I are jokingly putting in a pause and saying we're having "ham...burgers" so that it's kind of like we're having a traditional Easter ham.

I was slightly surprised, but the recipe is actually in that red & white checkered cookbook everyone has (Better Homes & Gardens?)

1lb ground pork
1lb ground ham (this is hard to find and people will look at you crazy when you ask for it. It's NOT the same thing as ground pork)
2/3 c. cracker crumbs
1 egg
1/2 c milk
1/4 c diced onion
dash of pepper

For glaze:
3/4 c orange or pineapple juice
1 big tablespoon brown sugar
*just mix these together

Mix all the ingredients in a bowl and shape into a loaf. Place in a baking dish. Bake at 350 for 1.5 hours. During the last half hour of baking, spoon glaze over top.

I've eaten it my whole life. I grew up in the middle of nowhere in PA and a lot of the local butcher shops there have a pre-mixed hamloaf mix which is just the pork and ham already ground together. You still have to add the rest of the ingredients. I currently live in MD where everyone thinks I'm insane for eating hamloaf, but I did find pre-made hamloaves at the local Amish market.
My grandparents best friends in N-central Indiana used to have a little diner and every Sunday, my grandma's friend Betty used to get up at the crack of dawn to make hamloaf for 600 for the Sunday lunch special. We always used to eat there after church. Betty's recipe is slightly different:
(from my grandpa and scaled down to feed maybe 6 people instead of 600!: "It is one pound ground ham, 1/2 pound ground pork, 1/2 pound
ground beef, 1 cup milk, two eggs, 1 tsp. mustard, 1 tsp. Worchestershire
sauce, 1 cup cracker crumbs, 1/2 tsp. salt (only if crackers are salt
free). Bake 45 minuts at 350 degrees. The sauce is 1 cup ketchup, 1
tsp. mustard & one coup brown sugar. After the 45 minutes for the loaf,
pour off any grease and add the sauce ingredients and return to oven and
bake another 15 minutes or until bubbly and set.")

We had lunch at my mom's, the usual ham, scalloped potatoes, deviled eggs, etc.

MIL, a nephew and a cousin are coming over for dinner tonight and we're having philly steak sandwiches, scalloped potatoes, green salad and Easter shaped rice krispy treats for dessert (meaning I didn't think about dessert until yesterday and it was the only thing I could make with what I had in the house).

It was just dh and I. I was running behind and Ds got hungry super early so he had some pizza.

For dh and I, I roasted a turkey breast and had baked beans, deviled eggs and parmesean noodles on the side.
