egg replacer?

besides ener-g egg replacer - what else can i use? i'm in a pinch & whole foods is an hour away. i read online that i could use corn starch, milled flaxseed, etc... but i've never personally used these to replace egg in a recipe. can anyone advise me. fwiw, i'm baking a chocolate cake. thanks!

FWIW, I don't use egg replacer in my chocolate cake recipe. The cake is really delicious and you wouldn't have to worry about the egg replacer.

I have not really worked with flax seeds as egg replacer but I know it's possible.

I've used ground flax, and it worked well and tasted good in the cookies i made. There's a ratio that you mix with water an let sit for a bit, but you'd have to google it. I'd just opt for the recipe that doesn't call for eggs, however.

thank you! i ended up making the chocolate cake from chooseveg.com (which completely rocks by the way). it doesn't require eggs, so i went that route to be safe. i plan to make chocolate chip cookies this week, so i'll try the milled flaxseed in that to replace the eggs. thanks again!!!

Glad it turned out well! I almost always use ground flaxseed. 1 T of flax meal mixed with 3 T water (to replace 1 egg). Mix well and let stand for a minute before you use it, it will gel up and have a very egg-like consistency.

I've used soy powder as a replacement for eggs in baking. 1 rounded tablespoon and about 1-2 tablespoons water for each egg.
