Leftover Ham

Who else has it?? We have tons. Way more than a family of 4 really needs, but it was cheap and both of my kids love it.

So what are you doing with your leftover ham? I know I'll be making a pot of ham & beans with the bone.

We bought a nitrate-free half ham from Trader Joe's just like we did at Christmas, but this time we got the half without the bone. I was a little disappointed, but it does mean that we got more meat! I still plan on making a 13 bean soup even though we don't have a bone. I'll just put chunks of ham in there. Yum! It was sooo good when I made it this winter. Other than that, we plan on eating it plain, although white beans & ham would probably be delish!! Maybe I'll make that. I haven't made that since I was in college.

I'm jealous. I LOVE leftover ham.
It makes great lentil soup with just onion, carrot, celery and bay leaf or black bean soup with onions, jalapeno and cumin.
Cubed it goes onto pizza, into frittattas, scallopped potatoes or macaroni and cheese and braised with any kind of greens but especially kale.
I like to freeze cubes in little 1 cup containers for future use.

Western omelettes!!

The lentil soup with some ham sounds yummy too.

You can put ham in almost anything.

omelettes
breakfast casseroles
sandwiches
egg sandwiches

I freeze ham quite often so I can just toss it into anything.

We have the bone and some ham bits, so I'll be making split pea soup w/ham and homemade croutons. Yummy!

Omelettes and other breakies will involve ham this week, and we will eat lots of cold ham for lunch, and I will be making a ham bone soup or two. I love using ham stock for curried butternut squash soup, or baked potato soup... mmmmmmmmmmmmmmmmm... SOUP!

I also love to make casseroles with ham!

I didn't get one for Easter, but when I have it leftover I love white bean and ham soup!

Also, pasta with cheesy white sauce, ham and peas (usually small shells or bowties).

Ham and scrambled eggs.

Last time I made some ham and cheddar calzones, but my recipe needs some work! lol

I get the nitrate free type too - yum!

scalloped potatoes with ham. I cube it and freeze it too.
