I have coconut milk...now what do I do with it?

I need ideas and recipes to use with canned coconut milk! I know some people here use it in smoothies; how much do I put in? What other ingredients?

This is mainly for my uber-picky stick thin kids who am I am trying to get some healthy fat into their diet.

My main use of coconut milk is in curry, but you can use it instead of cow's milk in virtually any recipe.

I make my yogurt with half coconut milk, half jersey cow's milk. It is amazing!!!

I like it in curries a lot. (curried lentils, curried potatos, curried chicken, and more).

I love making a dandy blend coconut latte. (you mix dandy blend in half hot water half hot coconut milk to taste, and sweeten with some maple syrup if you want.) It's so good. (dandy blend is a powdered dandelion root/chicory nutritious caffeine free coffee substitute. it's expensive though. really good in a latte like this.

coconut milk in sweet potato mashed potatos is so yummy.

mostly curries though.

for smoothies, I think I would just use coconut milk instead of any other liquid. you could use a little, or a lot. (a lot of people also put some coconut OIL in their smoothies.) I'd personally make a milkshake-y thing I think with lots of coconut milk, some frozen fruit, an egg yolk, and maybe some yogurt.

We are dairy free these days (kid's sensitivities) so I use CM for just about everything. Really like this recipe though (use a can of CM instead of cream and any winter squash--I usually use delicatta): http://www.recipezaar.com/recipe/Del...ash-Soup-71141

It makes the most fabulous chocolate ice cream. And baked rice, and soups, smoothies, basically anything.
