I'm in search of the perfect brown bread recipie. I use my MIL's Bosch, but my bread turns out pretty heavy still. I have found some homemade recipes for dough enhancer (lecithin, ascorbic acid, ginger etc in them) and plan to try that, but I do see lots of references to SAF brand of yeast.
Any place in Canada online you can buy it? Or, a store equivalent? Here we can get Bakipan brand, or Fleishman's (I use Fleishman's instant dry active yeast, but I don't know if this is working....and I do "test" it, and it does foam well however. I also have been measuring my temp of liquids with a thermometer, and experimenting with different amts of flour)
