Restricted ingredient salad dressings?

Need some ideas for salad dressing/veggie dips. DH is going on a 21-day yeast cleanse, starting in a couple of days. I'd like to be able to make something for him to dip veggies in or put on a salad. Even my hummus has lemon in it...

He can't have:
* fruit, including citrus
* soy
* dairy
* vinegar
* anything fermented
* sugar and other sweeteners

Lemon balm, oil, pepper. Garlic, dill, basil, oil & water.

Wow, that's a tough one!

how about make hummus minus the lemon?

White bean dips usually have a teaspoon of lemon, but you could make that without.

How about roasted veggies pureed with some evoo, garlic, salt and pepper

Is tomato considered a fruit for this diet? How about salsa?

Oh, wow, Heather, I totally forgot about salsa!

Jocelyn: the lemon balm is a great idea. I hope I can find some around here.

Sumac has a tangy flavor similar to lemon but not quite the same.

I 2nd the white bean puree and/or hummus. Ive made both without lemon, it can easily be done. How about some type of pesto? You could do it without the parm. Traditional, or could rehydrate some sundried tomatoes blend with some spices and some roasted garlic. An italian type bruschetta?

Roasted garlic, oil, salt, pepper! Mmmmmmmmmmmmmmmm I can eat it with a spoon!

I was going to say just olive oil (a really good olive oil) and salt but this sounds absolutely wonderful!

I am pretty sure on a yeast cleanse you can have apple cider vinegar (depends on your source...but anyway) the ACV with the mother is the best kind and could be beneficial for a yeast cleanse...I use the salad dressing packets, which could be a no-no on the cleanse, but anyway, I use the apple cider vinegar and olive oil, instead of regular vinegar and vegetable oil...mmmm, so yummy and healthful! You may be able to use your own spices and add the oil and vinegar....

Sadly, no ACV on this specific cleanse. I was disappointed in that, because we use ACV more than any other vinegar, and started using it when DH was doing the Body Ecology Diet. But, this cleanse (which he's doing per his chiro) seems to be stricter/different than the BED.

Ooh. Coconut milk yogurt sounds great. I wonder if he's allowed to have that... does coconut count as a fruit? I'll have him ask his doc.

Bought some tomatillos at the store yesterday. Thinking I can do something with those!

I bet you could steam, blanch, or roast those tomatillos and combine them with herbs, peppers, etc, until you get a salsa. I think a lemony herb (like the lemon balm I mentioned earlier) would help.

If you lived near me, you could have some lemon balm. It's taking over.

I made this a few weeks ago and it was really good-

Mexican Bean Spread
Authored By: Polly Pitchford, Full Spectrum Health™
Serve with chips, vegetables, or as a sandwich spread and garnish with sliced avocado, sprouts, and sliced black olives.
Diet Types: Vegan, Vegetarian
# Ingredients: 1 can pinto or black beans, drained
# 1 teaspoon chili powder
# 1/4 cup chopped onion
# 1/2 teaspoon salt
# 1 tomato, chopped
# 1 large clove garlic, chopped
# 1 teaspoon Cumin
# 1 stalk celery, finely chopped
Serves: 4
Cooking Time: Under 15 minutes
Instructions:
Blend all ingredients in a food processor until almost smooth. Adjust seasonings to taste.
