My sister traveled to Europe with a friend with celiac's and they discovered (sadly toward the end of their stay!) that the drug stores carry tons of gluten-free foods. Just figured I'd mention that in case you haven't thought to check there.

Anyway... you can totally do this! We don't eat dairy, eggs, meat, etc. and are mostly gluten-free (at times 100% gluten-free) and mostly soy-free. However we do love almost every veggie... that might make it tough if you don't like 'em!! Some things we like: corn tortillas with refried beans, avocado, salsa, & veggies... rice or quinoa pasta with sauce... stir-fried veggies with rice... sauteed potatoes with onions, mushrooms, & red beans... spring rolls with peanut sauce... homemade veggie burgers... crockpot soups (lentil soup or coconut squash soup are our faves!)... roasted veggies with pecans... OK I'm getting hungry but DS is sleeping in my lap
^^^ Ooo those foods do sound really yummy! Luckily being in Spain has made veggies grow on me more than before. And I hadn't thought of pharmacy having foods! I'll have to check that out. I'm pretty limited on what I eat though (not limited, but my host family makes everything- I don't). But it's only more month so I'll be okay until I get back. But I think stir fry and Mexican type foods will be my life savers anyhow- and they're my favorite foods too. my friend's friend apparently has a g-free panderia (bakery) by his house somewhere in granada too... So I'm totally gonna investigate that!! haha. I'm so left out and deprived when everyone else can have pastries and I can't.

^^^ Oof!! I'm sorry to hear about all your struggles and troubles. That is not fun. Yea I'm definitely putting my mind to it! Haha. And the most important thing I wanna focus on is eliminating gluten and dairy for sure, then whatever the blood test shows. And THEN the meat thing will be the next priority. Hope your diet and everything continues to be okay!!
